Irregular polygon cells fit together in a loose round disc, like cracked earth or a Voronoi diagram. The Voronoi Disc tuile mold bakes one large Ø140 geometric tuile that crowns an entremet, covers a tart or sits under a plated dessert.
Batters are flexible. A classic butter tuile gives a golden, buttery crunch, while colour can come from cocoa, matcha or fruit powder folded into the mix, and a sesame or almond tuile adds nutty flavour and texture. Once baked, the finished tuile can be draped over a rolling pin or bowl while still warm to set it with a gentle curve.
A plain butter tuile looks warm and organic, and cocoa or charcoal give a bold modern look. It suits modern plated desserts, tasting menus, minimalist cakes and design-led cafés. Custom tuile designs are available on request, with low minimum order quantities for bakeries, chocolatiers and F&B brands.
